Creating A Custom Wok Range: A Walk-Through Guide
Most equipment manufacturers design units that fit a few standard dimensions. While this can suit the needs of a few people, sometimes it’s better to get the exact appliance your restaurant needs. How many burners do you need? What’s the optimal amount of space your unit should fit? Do you need a built-in backsplash?

While this guide is not a replacement for an expert, it will give you some things to think about when considering your custom wok range.
Choose the Range Type
Town Food has 3 range types to choose from:
- MasterRange, a thick fire brick with infrared abilities that radiate and contain heat between batches. The cream of the crop, best of the best.
- York, the most popular choice, features ceramic insulation that retains heat between baches.
- EcoDeck, an eco-friendly range designed to lower your water usage and utility bill. It comes in stainless steel and runs without cooling water.
From there, you can choose your material (standard stainless steel or the budget cold rolled steel), change your exhaust type, and then add the number of chambers you’d like.

Choose Your Number and Type of Chambers
At this point, you’ll choose the type of heated chambers you’ll use to cook with each type of pan.
- Wok Chambers are insulated chambers suited for heating wok pans. You can even get specific Cantonese or Mandarin chambers.
- Stock & Steam Chambers are large insulated chambers meant for holding soup pots.
- Warming Chambers are the only non-insulated chamber options. They can be gas- or flue-heated. Adding them may impact the length and depth of your machine.
From there you choose whether you prefer natural gas or propane gas.
Getting Down to the Details
A LOT of intricate detailing goes into designing wok ranges – burner types, faucet types, custom dimensions, and other special options. This is where an expert comes in – they’ll guide you through the rest of the process and create a drawing for you.
